Regarding shaving for a wedding, I understand you feel you need to adhere to the built-in prejudice of others that feel a beard is not a "normal" way for a guy to look and he looks better shaven. That is fine and your decision.

I would say, however, if you think you will be a bearded guy most of the time from now on, you should keep the beard despite the requests for you to shave. This is who you are. They don't get to re-make you in their image. But what I think there is a mindset that this beard is NOT you and perhaps is temporary, so in the photos they don't want to see you bearded because this is not normal for you. If that is not true, you need to inform them of this and that the beard is staying. 10 years from now if you remain bearded most people looking at the pics will actually be grateful you didn't shave and showed yourself as who you really are.
